Wild plants in Mardin cty

This thesis includes the ethnobotanical investigation of edible wild plants that contribute to the creation of the gastronomic image of Mardin cuisine. Edible wild plants have been identified for this purpose. Tariffs for the determination of edible plants and the preparation of local uses made with these plants have been recorded in order to ensure the continuity of the natural plants of the local people for food consumption culture from generation to generation. For this purpose, studies were carried out in 142 neighborhoods with high ethnobotanical potential in 10 districts of Mardin province in 2019-2020. A total of 202 resource persons were interviewed and plant samples were taken. These samples were made into herbarium material and then identified. As a result of the study, 117 taxa belonging to 34 families and 92 genera were determined. The first 5 families containing the most taxa among the plants determined to be used in the research area are respectively; Asteraceae 19 (16.24%), Brassicaceae 10 (8.55%), Fabaceae 9 (7.69%), Rosaceae 9 (7.69%), and Apiaceae 7 (5.98%). Considering the ethnobotanical usage of these taxa; 36.55% (53) raw, 35.86% (52) eating, 12.41% (18) drinking, 6.90% (10) brine, molasses, 4.83% (7) was used for spices and 3.45% (5) for dairy products. Food use of 26 plant species was recorded for the first time in the Southeastern Anatolia Region.
