Abstract (EN)

In our country, which is covered with seas on three sides in terms of aquaculture richness, the production area is 26 million hectares and aquaculture is one of the most important food sources in the food industry. As well as the diversity and nutritional value of processed seafood, storage and packaging conditions are also highly important for public health. The aim of this thesis is to evaluate and examine the operating capacities of processing facilities in Bursa, Tekirdağ and Kocaeli provinces and to make the transition of enterprises to quality production more efficient. Within the scope of the study, surveys were conducted about the operational capacities of the processing plants operating in the relevant provinces and investigations were carried out. The information of the aquaculture processing facilities that will be active in the study was obtained through the Food Safety Information System of the Ministry of Agriculture and Forestry. Processing plants in Bursa, Tekirdağ and Kocaeli provinces were visited, and survey questions organized by the company representative, responsible manager or the relevant responsible manager were answered in one-to-one interviews, and information about their current status was obtained. The information obtained was interpreted and presented with solution suggestions.
