Özet (EN)

In this study, crude oil, neutralisation, bleaching vinterisation that are the stages of refining of crude corn oil and physicochemical and nano-sized changes in deodorisation were analyzed and their valves were determined. Acidity, peroxide value, refractivite index, viscosity, color, saponification value and the value of unsaponification matters, sterol, fatty acid composition, mineral matter, and the value of SEM analysis were measured. Acidity, peroxide value, refractive index, viscosity, saponification value and the value of unsaponification matters were measured as 0,08 mg KOH/g, 0 meq active oxygen/kg, 1,46 nD, 68,4 mPa, 202, 88 mg KOH/g, 0,23 g/kg respectively. When it was looked at fatty acids composition, total saturated fatty acids was measured as 12,44 %, total monounsaturated fatty acids of unsaturated fatty acids was meusured as 31,09 % and total polyunsaturated fatty acids was measured as 56,96 % at the last stage of refining. When is was looked at sterol composition of corn oil in deodorisation that is the last stage of refining, campesterol, stigmasterol, Δ5,23-stigmastadienol, clerosterol, beta-sitosterol, Δ7-stigmastenol were determined.
