Abstract (EN)
Each region has its own unique food culture. In the Menteşe district of Muğla, there is a food culture that has survived from the past to the present. Since it is known that the Yoruks live in the region, the examination of the local cuisine of Menteşe within the scope of the Yoruk cuisine culture has been determined as a research subject. For this reason, the local people residing in Menteşe neighborhoods constitute the universe of the research. Interview technique, one of the qualitative research methods, was used as the data collection technique and data were collected from 36 people determined by the deliberate judgmental sampling method between January 2023 and March 2023. The research data were analyzed with an analysis program and the answers of the participants were tabulated with the descriptive content analysis method. According to the findings obtained from the research, the food cultures of the people who migrated in the past constitute the local cuisine of Menteşe, but it has been observed that the equipment, cooking methods and storage methods used in cooking in the past are not found in today's Menteşe cuisine.
