Mineral content and consumption status of antep pistachio sold in the market

This study was carried out to determine the consumption characteristics and mineral content of Antep pistachio. 400 people who applied to the Family Health Center in 8 different socioeconomic regions of Gaziantep were selected through random sample. Then, Antep pistachio consumption status of these people was investigated. 11.5% of the individuals per day consume Antep pistachio, 36.2% of them consume one day a week. While 94.5% of the individuals participating in the study consume Antep pistachio as a snack, 71.5% consume it in the desserts and 37% consume it in the meals. In addition to snacks, pistachios are used in desserts, cookies, pilafs and meatballs. While 63.2% of the individuals consider price when buying pistachios, 60.8% consider mold growth and 51.5% consider the size. 93% of individuals keep pistachios in a cool and dry environment. The average amount of pistachio consumption of the individuals participating in the study was 27.6 g for males and 14.5 g for females. Pistachios provided 7.3% of the daily protein requirement of male subjects. The rest of the daily intake requirements are met by 33.3% for copper, 9% for iron and 17.7% for phosphorus. Pistachios supply 7.3%, 16.7%, 7.7% and 14.7% of the daily intake requirements of vitamin E, B1, B2 and biotin, respectively. Contribution of pistachio which women consuming average 14.5 g per day to daily requirement respectively %4.6 for protein,%11.1 for copper, %2.2 for iron, %9.3 for phosphorus, %9.1 for B1 vitamin and %7.7 for biotin. Mineral analysis of pistachios was carried out and the average amount of calcium was found to be 136.31 mg, magnesium 146.38 mg, sodium 17.08 mg, potassium 759.21 mg, phosphorus 504 mg, iron 3.23 mg, copper 1.49 mg and zinc 2.47 mg in 100 g pistachios. In the light of these findings, we concluded that contribution of pistachio to nutrition ingredient and daily admittance should be examined in a more detailed way.
