Abstract (EN)
Nutrition and kitchen habits of individuals as fundamental needs are constantly changing and developing under the impact of geographical location and surrounding culture. Since Sakarya has been on passageway throughout the history due to geopolitical location and constantly receives migration, this city has been influenced by different ethnical cultures. Such ethnical differences also influenced kitchen habits of the local people. There are more than twenty different ethnical groups in the city. Laz, Cherkes, Abkhaz, Georgians, Manav and Bosnians are major ethnical groups. Different groups in this region enabled individuals to preserve their own cultural elements while effecting from other cultures to create a cultural symphony. Accordingly, in this study, literature review will be conducted to analyse cultural and ethnical structure of Sakarya, dominant ethnical groups of Sakarya and kitchen cultures of these ethnical groups and photographs will be taken to obtain various visual documentary recordings after interviews and studies on individuals with different ethnical origin. On-going traditions for each cuisine will be recorded and change in these tradition in the course of time will tried to be identified. Thus, this difference in the region and on-going habits from past until today will be visually recorded.
