Culinary culture is a phenomenon that exists with people and will continue to live with people's survival. Academic studies are of great importance in order not to forget the culinary culture and to transfer it to future generations. This study was needed to bring the dishes of the Bulgarian immigrant cuisine, which has a deep-rooted past and culinary culture, to the literature. This research it is aimed to examine the food cultures of the Bulgarian immigrants living in Sakarya, to determine whether there is a standard in their recipes, and finally to establish a standard in their recipes. In this context, data were collected by applying the interview technique, one of the qualitative data collection methods, about the recipes that make up the Bulgarian immigrant cuisine and using a semi-structured interview form. Within the scope of the research, data were obtained by conducting face-to-face interviews with 15 Bulgarian immigrants living in Sakarya. From the data obtained, 72 recipes belonging to immigrant cuisine were reached. Dishes whose recipes were reached were reduced using inclusion and exclusion criteria, and standard recipes were determined for 15 of them. It is thought that the creation of standard recipes will prevent the meals of the immigrant cuisine from being forgotten and will be beneficial in keeping the culinary culture alive.
