Abstract (EN)
Red pepper (Capsicum annum L.) belongs to the Capsicum genus of the nightshade family and is a cultivated plant that grows in Turkey, America, Europe and Central Asia. In this study, heavy metal, toxicological and antioxidant contents of six different isot samples taken from Şanlıurfa central village and its districts and two different isot samples taken from the central district of Kahramanmaraş province were determined and compared with each other. Cu(Copper), Fe(Iron), Hg(Mercury), Cd(Cadmium), As(Arsenic), Pb(Lead), Ni(Nickel), Sn(Tin), Zn(Zinc) and Co(Cobalt) amounts were analyzed. After this analysis process was done in the microwave unit, heavy metal and mineral contents of red pepper (isot) samples were determined in three parallels with ICP-OES (inductively coupled plasma optical emission spectrometer) device. Considering its nutritional properties, the amount of zinc (Zn) from these heavy metals was measured as 1.602±0.001 mg/kg, and when this value is compared with the standard value determined by JECFA, this value determined by JECFA (Food Additives Expert Committee) is within the weekly acceptable ranges. has been found to be. Aflatoxin concentrations of red pepper (Isot) samples were measured with an ELIZA device. As a result of these measurements, the highest concentration value was measured as 3ppb and the lowest concentration value was 1.331ppb, and it was determined that these measured values were within the ranges determined according to the Turkish Food Codex regulation. When the okra toxin concentrations are examined, the highest 7.17 ppb and the lowest 3.99 ppb were determined, and it was also determined that these values were within the range of the Turkish Food Codex regulation. In antioxidant activity analysis, using synthetic antioxidants (Trolox, BHT and BHA) as standard, using ABTS+ (Free Radical Removal), DPPH (Extinguishing Radical Removal) and Reducing Power Methods, the antioxidant activities of the compounds were determined with UV spectrophotometer device and the necessary evaluations of these activities were made.
