Determination of biochemical composition, meat yield and reproduction of land snails, Helix aspersa and Helix lucorum, in Sinop

Abstract (EN)

The study was conducted on economic land snails, Helix aspersa and Helix lucorum, in Sinop between June 2012 and May 2013. Length, live weight, edible meat weight, internal organs weight and meat yield also dry meat, ash, protein, lipid and carbohydrate rate of both snail speicies were determined. According to the results, mean length, live weight, edible meat weight, internal organs weight and meat yield were as 3.98±0.42 cm, 18.06±1.48 g, 4.21±0.68 g, 5.10±1.07 g, 23.60±1.80% and also mean dry matter, ash, protein, lipid and carbohydrate were found as 17.27±1.37%, 15.46±1.30%, 65.01±2.28%, 3.79±1.25%, 15.75±2.50% in H. lucorum, while mean length, live weight, edible meat weight, internal organs weight and meat yield were as ; 3.44±0.33 cm, 10.04±1.06 g, 2.40±0.53 g, 3.23±0.78 g, 23.10±1.55% and also mean dry matter, ash, protein, lipid and carbohydrate were found as 16.13±1.49%, 11.92±1.06%, 63.04±2.51%, 4.10±1.12%, 20.93±2.73% in H. aspersa, respectively. As a result, it was determined that protein levels changed depending on reproductive activity in spring and autumn while lipid levels changed reproductive activity and hiberbation in both species.
