Abstract (EN)

Lacticacidbacteria (LAB) are gram-positive, facultativeanaerobic, catalase-negative, motile,non-cytochrome and non-spore formingbacteria.In this study, 163 strains of LAB were isolated from dairy products and their of the exopolysaccharides capabilities have been investigated and determined culture conditions for EPS production.In our study, the antimicrobial activity of the isolates was examined by a Sandwich Overlay Method and their properties were determined by biochemical tests and selected isolates were identified by RiboPrint.Isolates were found to have high antimicrobial activity. EPS production method of isolates was determined with microtiter plates and including congo red medium. Finally, optimum EPS production values of the isolateswere found by response-surface method at optimum temperature, optimum nitrogen and carbon amounts. EPS values of the isolates were found as 46.65 mg / L - 53.17 mg / L.
