Abstract (EN)
In this study, Genus of Sarı Lop fig's seeds and oil have some physicochemical characteristics of mean values have been determined in the following way; internal weight, 1000 seed weight, moisture content, in order of, 42,44 g, 957 piece, 3,91 g, % 91,62 and % 11,81. Total sterol, non saponified substance, iodine value, refractive index, saponification value, viscosityand oxidative stability value of fig's oilare calculated respectively as 6636,18 mg/kg, 21,6 g/kg, 176,5 I2 g/100 g, 1.45 (nD), 195,88 mg KOH/kg, 51,6 mPa, 2,67 110 ° C/h. Genus of Mor Güz fig's seeds and oil have some physicochemical characteristics of mean values have been determined in the following way; internal weight, 1000 seed weight, dry matter and fruit kernel moisture content, in order of, 32,36 g, 946 piece, 3,76 g, % 92,02 and % 9,71. Total sterol, non saponified substance, iodine value, refractive index, saponification value, viscosityand oxidative stability value of fig's oilare calculated respectively as 5667,88 mg/kg, 13,1(g/kg), 175,8 I2, 1,48 (nD), 184,13 (mg KOH/kg), 51,4mPa, and 2,32 110 oC/h.
