Genus of Mor Güz fig's seeds and oil have some physicochemical characteristics of mean values have been determined in the following way; internal weight, 1000 seed weight, dry matter and fruit kernel moisture content, in order of, 32,36 g, 946 piece, 3,76 g, % 92,02 and % 9,71. Total sterol, non saponified substance, iodine value, refractive index, saponification value, viscosityand oxidative stability value of fig's oilare calculated respectively as 5667,88 mg/kg, 13,1(g/kg), 175,8 I2, 1,48 (nD), 184,13 (mg KOH/kg), 51,4mPa, and 2,32 110 oC/h.
