Investigation of heavy metal presence in yogurt and ayran offered to consumption

Abstract (EN)

Yogurt and ayran samples of different brands used in this study were obtained from Afyonkarahisar provinces and districts between February and June 2019 and a total of 80 samples, 40 yogurt and 40 ayran, were analyzed for analysis. It was aimed to investigate the presence of heavy metal in the collected yogurt and ayran samples with the ICP-MS device and the results obtained were compared with the literature information. In the study, average values of aluminum(Al),chromium (Cr), iron (Fe), cobalt (Co), nickel (Ni), copper (Cu), zinc (Zn), arsenic (As), cadmium (Cd) and lead (Pb) were determined in yogurt:0,40 mg/kg, 0,00 mg/kg, 0,32 mg/kg, 0,00 mg/kg, 0,00 mg/kg, 0,03 mg/kg, 3,05 mg/kg, 0,00 mg/kg, 0,00 mg/kg, 0,00 mg/kg;in ayran:0,08 mg/kg, 0,00 mg/kg, 0,11 mg/kg, 0,00 mg/kg, 0,00 mg/kg, 0,01 mg/kg, 1,66 mg/kg, 0,00 mg/kg, 0,00 mg/kg, 0,00 mg/kg respectively. Considering the results obtained, it was determined that there was no contamination that could be harmful for human health by determining that the heavy metal levels in yogurt and ayran collected from Afyonkarahisar and its different districts were within the limits determined by the Turkish Food Codex (2002, 2008).
