Abstract (EN)

Oleosomes consist of a lipid core surrounded by protein and phospholipids. The oil in this structure is naturally protected from the external environment (temperature, oxygen, etc.). However, the low-temperature soaking process applied in the extraction of oleosomes prolongs the extraction time and limits the use of oleosome from an industrial point of wives. Extraction of oleosome is similar to protein extraction due to the protein layer in its outer structure. Ultrasound application which is one of the innovative methods used in protein extraction, can also be used in oleosome extraction. In this study, it was aimed to reduce the soaking time in the water with the ultrasound application. The soaking process bye ultrasound was optimized using the response surface method. As a result of this study, the effect of sonication on oleosome extraction was investigated and the highest yield was obtained at 92.59 amplitudes and 46.97 minutes. Afterwards, model emulsions were produced using oleosomes and and rheological analyzes were performed.
