Abstract (EN)

In this study, antioxidant activities of lyophilized water and evaporated ethyl alcohol extracts of (Sorbus subfusca) belonging to the Rosacese family were evaluated. Sorbus subfusca is an endemic plant found only in the Eastern Black Sea Region in our country. In the World, it has been found in only 4-5 countries of the Asian Continent. Sorbus subfusca to evaluate the antioxidant and radical removal activities of Cu2+- Cu+ reduction capacity (CUPRAC method), Fe3+-Fe2+ reduction capacity, 1,1-Diphenyl 2-pikril hidrazil (DPPH) free radicals and removing the activity of the frap reducing capacity, Bipiridil metal chelating activity, and 2,2-Azino-bis (3-etilbenzotiyazolin-6-sulfonic acid) (ABTS) radical removal activity, DMPD radical removal activity, total antioxidant activity, the amount of total flavonoid total phenolic compound amount and compound determinations are made, BHA, BHT, α-tocopherol and trolox were used as reference antioxidants and compared. Sorbus subfusca used in the study was observed to have a low reduction capacity of lyophilized water and evaporated alcohol extracts. Compared to standard antioxidants, low activity was observed again. Radical removal methods also showed lower radical removal activities of extracts than standard antioxidants. It was found that alcohol extracts evaporated in both reduction capacity and radical removal activities showed better antioxidant activity than lyophilized water extracts. Unlike other methods, it has been observed that the bipyridyl metal chelating activity of extracts is higher in activity compared to standard antioxidants. Metal chelating activity percentages of lyophilized water and evaporated ethyl alcohol extracts of Sorbus subfusca and evaporated ethyl alcohol extracts and standard antioxidants at a concentration of 10 µg mL-1 with bipyridyl reagent were 75.18% in Sorbus subfusca-water, 68.73% in Sorbus subfusca-alcohol, 12.53% in Trolox, 20.92% in α-tocopherol. It was determined as 45.96% for BHA, 66.54% for BHT and 90.88% for EDTA. Again, the percentage of lyophilized water and evaporated ethyl alcohol extracts of Sorbus subfusca and evaporated ethyl alcohol extracts and linoleic acid emulsion at a concentration of 20 µg mL-1 to inhibit peroxidation was 70.93% in Sorbus subfusca-water, 82.63% in Sorbus subfusca-alcohol, 91.26% in α tocopherol, 98.00% in trolox. BHA was 98.67% and 99.00% for BHT.
