Investigating of sorbate and benzoate effects that applied in different ratio on some characteristics of fermented sausage

Abstract (EN)

In this study, potassium sorbate and sodium benzoate effects on physical, chemical and microbiological characteristics of fermented sausages produced by the traditional method were investigated. The amounts of potassium sorbate and sodium benzoate that were used in this study determined by using Central Composite Design method with three central point for Response Surface Methodology. In the study, fermented sausages were dipped into double combined solutions of potassium sorbate (0-12%) and sodium benzoate (0-12%). Reducing of antimicrobials in sausages was aimed with this study. The study was carried out at two parallels and two repeats with 11 groups that are modelled for Response Surface Methodology. The produce fermented sausages were subjected to fermentation process for 7 days and then at 0-4°C ripening period for 30 days were applied. Physical, chemical and microbiological analyses of fermented sausages were performed at three different time period like 0.th and 7th day of the fermentation and the last day of ripening period (30th day). By this study at the end of fermentation it was found that sodium benzoate decreased pH value and increased SYA, a*(in), a* (out), b*(out) values. Potassium sorbate also increased peroxide, SYA, L*(in), a*(in), b*(in), L*(out), a* (out), b*(out) values and decreased lactic acid bacteria numbers at the end of the fermentation. At the end of storage period sodium benzoate increased *(in), a*(in), b*(in), a* (out) and b*(out) values and decreased lactic acid bacteria numbers. Potassium sorbate also increased ise depolama sonunda, fat content, proteolyse, TBA, L*(in), a*(in), b*(in), L*(out), a*(out), b*(out) values at the end of storage period. During the study both of potassium sorbate and sodium benzoate decreased Enterobacteriacea and mold and yeast numbers.
