Abstract (EN)
In this study is divided into two separate section; the first section was to investigate the biochemical composition's bogue (Boops boops) from Aegean Sea and Mediterranean Sea [proximate composition (lipid, moisture, and ash), element concentrations, and fatty acid compositions] and the second section was to determinate the shelf life of bogue from Mediterranean. Some differences were observed between the two regions regarding proximate compositions. The lipid content of fishes caught in the Aegean Sea is calculated to be higher than that of fishes caught in the Mediterranean. The C16:0 and C18:1n9 acids were determined the prevalence fatty acids in saturated fatty acids (SFA) and monounsaturated fatty acids (MUFA) respectively. This was the similarity between two regions. However, C18:2n6 in the Aegean Sea and C22:6n3 in the Mediterranean were determined the highest fatty acids in polyunsaturated fatty acids (PUFA) contents. Additionally, Mg, P, Ca, K, Fe, Cu, and Zn of bogue from Aegean and Mediterranean were investigated. The amount of the K and P were measured to be the highest two macro elements. The second section is about the shelf-life of bogue caught from Samadağ. To determine the changes in quality of bogue during ice-storage, chemical, microbiologic, sensory evaluation were investigated. Putresine, spermidine, spermine, seretonine, and histamine were the some biogenic amin determined during storage. Total bacteria and total coliform counts were carried out for each sampling day.The initial microbiological count for bogue was 2.58 log cfu/g. The amounts of microbial load were found higher at the end of the study.
