Abstract (EN)

This study was undertaken to investigate antimicrobial effect of 5-hydroxymethylfurfural (5-HMF), acrylamide and 4-methylimidazole on Klebsiella sp., Enterecoccus faecalis, Escherichia coli, Proteus sp., Staphylococcus aureus, Pantoea sp.,Yersinia sp., Lactobacillus casei, Lactobacillus rhamnosus, Streptococcus thermophilus,Lactobacillus plantarumby disc diffusion and Minimum Inhibition Concentration (MIC) methods.The chemicals used were purchased in pure form. In the disc diffusion method, ampicillin, chloramphenicol and streptomycin antibiotic discs were used. The inhibition of antibiotic discs was found to be higher than the inhibition value caused by the concentrations of 5-HMF, acrylamide and 4-methylimidazole. According to the disk diffusion method inhibition was not observed for Lactobacillus rhamnosus, Streptecoccus thermophilus, Lactobacillus plantarum, Yersinia sp bacteria. MIC values could be determined for all bacteria.
