Present frequency of Salmonella-some pathogens bacteria and proteolytic lipolytic activities in white cheese sold in Ankara

Abstract (EN)
In our study , 75 samples of white cheese sold at various small markets andcrowd bazaar at the districts of Ankara between 05.10.2003-25.04.2005 hasbeen used. The presence of the bacteria Salmonella, Shigella, Yersinia,Klebsiella, Aeromonas, Proteus, Pseudomonas, Enterobacter, Citrobacter,Serratia, Vibrio, Escherichia, Hafnia, Cedecea, Staphylococcus, Listeria has beeninvestigated. In addition the live bacteria count, total coliform bacteria countand total E. coli count for all samples were realized. The proteolytic andlipolytic activities have been studied for all the isalated pathogen samples aswell. The total mesophyll bacteria average of the 75 white cheese samples were15,46x105 each/gr, the total coliform bacteria average were 14,40x105 each/gr,total E. coli count average was 10,75x105 each/gr. In our study the names andthe their percent in regard to the total isolates of all 86 isolates are as follows : 7Salmonella (%8,14), 2 Shigella (%2,32), 3 Yersinia (%3,48), 9 Klebsiella(%10,46), 5 Aeromonas (%5,81), 3 Proteus (%3,48), 5 Pseudomonas (%5,81), 12Enterobacter (%13,95), 6 Serratia (%6,98), 1 Vibrio (%1,16), 7 Escherichia(%8,14), 6 Hafnia (%6,98), 1 Cedecea (%1,16), 13 Staphylococcus (%15,12), 2Listeria (%2,32). 37 pathogen microorganisms have been isolated anddetermined as %3 S. paratyphi B, %5 S. cholerasuis, %11 S. typhymurium, %3S. sonnei, %23 S. flexneri, %3 Y. pestis, %3 Y. aldovae, %3 Y. rohdei, %3 K.pneumoniae, %13 A. hydrophila, %3 P. vulgaris, %5 P.mirabilis, %5 L.monocytogenes, %34?ü S. aureus. The proteolytic aktivities of the 37 pathogenbacteria isolated from white cheese has been studied at 37 ºC at CalsiumCaseinat Agar. 8 (%21,62) of the 37 isolated has shown proteolytic activity while29 (%78,38) isolated hasn?t shown proteolytic activity. In our study, lipolyticactivities of the 37 pathogen bacteria isolated from white cheese in GlycerolTribütrit Agar has been studied. 11 (%29,73 ) of the 37 isolated has shownlipolytic activities while 26 (%70, 27) isolated hasn?t shown lipolytic activity.
