Abstract (EN)
This study was carried out in the application orchard of Ordu University Faculty of Agriculture in Altınordu district of Ordu province during the 2021-2023 years. In this study, 5 blackberry varieties, Triple Crown, Jumbo, Cebeci, Arapaho, Chester Thornless, were used. During the study, the development of the plants was followed, the cultural processes were completed. Fruit weight, soluble solid content (SSC), pH, acitity and biochemical compositions were measured. At the end of the study, the variety with the highest berry weight was the Triple Crown with 6.56 g, while the variety with the least berry weight was determined to be Cebeci with 4.45 g. While the variety with the highest value in terms of soluble solid content was Chester Thornless with 5.5%, the variety with the lowest SSC value was determined as Cebeci with 4.1%. According to the data, it was determined that the variety with the highest pH amount was Arapaho with 4.24, and the lowest was Jumbo with 4.02. While the highest titratable acid content is in the Triple Crown variety with 12.11%, the lowest acid value with 13.74% is seen in the Arapaho variety. According to the vitamin C measurements, the variety with the highest vitamin C value is the Chester Thornless variety with 120, and the variety with the lowest value is the Triple Crown variety with 79. According to study total phenolic properties; It was determined that the variety with the highest value for DPPH was Cebeci with 21.05, the variety with the lowest value was Triple Crown with 14.18, the variety with the highest FRAP value was Cebeci with 61.45, and the variety with the lowest value was Arapaho with 39.95. For the total flavonoid value, it was determined that the highest value was in the Jumbo variety with 1500.00 mg, and the lowest value was in the Triple Crown variety with 844.83 mg. The aim of the study is to determine the fruit characteristics and biochemical compounds of 5 different blackberry varieties grown in the Ordu region and to increase production opportunities accordingly.
