Abstract (EN)
In this study, to determine the effect of the maturity of tomato physico-mechanical properties on compression test, bench tests were performed in a series. Trials to the point of tearing the shell is not detected at the end of the pour point of biological tomatoes, deformation, strength, modulus of elasticity, mechanical properties such as deformation energy, toughness, penetration energy were determined. Duncan's multiple comparison tests were performed using SPSS. Red and green tomatoes were significant for the degree of elasticity. Tomatoes were important for the maturity of different deformation ratio. The modulus of elasticity of the red and turning tomatoes, green tomatoes are also important for the difference between them was not significant.
