Abstract (EN)
In this study, fatty acid, total phenolic substance and radiation activity concentration values of olive oils obtained from Gemlik type grown in Osmaniye Central and Düziçi districts and Ayvalık type olives grown in Hatay Erzin were determined. It is aimed to determine the quality criteria of olive oils obtained from these regions. 12 fatty acids were determined from olive oil. It was determined that the fatty acid values of Osmaniye-Merkez and Hatay-Erzin samples were higher than those of Osmaniye-Düziçi. It has been observed that all the values obtained are in compliance with the free fatty acid properties stipulated in the Turkish Food Codex. In the total phenolic substance amount analysis, Center 353± 6,5 mg/kg; Düziçi 340,5±13 mg/kg; Erzin 448,5±25 mg/kg results were reached. In the analyzes made, no measurable radioactivity value was found in the oil samples. Key Words: Phenol, Osmaniye, Fatty acid, Radioactivity
