Abstract (EN)
Marination is one of the ancient techniques of preserving fish, its inclusion in fish helps in enhancement of sensory characteristics and prolong of shelf-life of fish and meat products. Marinades of fin fish are easily come-by ready-to-eat fisheries products in Turkey. This is due to the richness in nutrients and this makes it available and edible for consumer to eat without any further additional cooking, marinades consumption keeps increasing on yearly bases. Fish Marination could be expressed as fish produce which consists of fresh, frozen or salted fish or a group of fish treated with edible organic acid, like acetic acid, salt, which are inserted into brines, sauces or oil. Anchovy species are generally utilized for Marination because of its nutrients and great sensory characters. There are diverse techniques applied to carry out fish marinades, The preparation of fish marinades followed some routine process which depend on the form of the marinades (i.e. cold, fried and cooked, occasionally, pasteurization of marinades could be separated. cold Marination of fish are carried out in marinating bath which involves treatment with high acetic acid and salts components. Currently, Morganella psychrotolerans such as bacteria has been extracted from fresh tuna fish, cold smoked tuna and garfish. There is dangerous aggregation of histamine at 0-5 0C from the psychrotolerans extracted and they are presented to be crutialin histamine development in chilled aquatic foods, the strains have been extracted from marine products which is cross-linked in histamine fish poisoning formation. Morganella psychrotolerans are powerful bacteria that developed histamine and their isolation are recently discovered. Histamine occurrence by M psychrotolerans could not be prevented with only cold chilling of fish, thereby, inclusion of additives that could prevent spoilage are needed. The period of immersion is based on the species characters. The objectives of the studies are to find the inhibition of M. psychrotolerans, ii) inhibition of microbial growth and iii) physco-chemical quality of marinated anchovy fillets during refrigerated storage.
