Abstract (EN)
Bread, which has the largest share in the bakery sector, is an important food item in the nutrition of Turkish people. The production conditions of bread, which has an important place in our nutrition, are also very important for our health. Food enterprises that produce bread in our country have many deficiencies in production about hygienic conditions. In order to determine food safety risks in bread production and ensure safe bread production, bakeries should have a production approach based on hygiene and sanitation. The aim of this study is to provide information about the factors that affect food safety starting from flour and the risks of these factors, critical control points in bread production, possible dangers and preventive activities, hygiene and sanitation practices in bakeries and the properties of the bakeries for safe bread production.
