Abstract (EN)
Coffee, a beverage discovered in Arabian Peninsula, spreads all of the world by creating its own culture. Coffee, as unique beverage, caused coffe-houses establishment, as social-public institution that reflect social structure of their region. From past to today, coffee-houses undergone several changes and transformations and continue to reflect cultural and social effects of their foundation regions.In this study, framework of coffee-houses transformation process examined with focus of Seyahatname of Evliyâ Celebi. Along industrialization period, with effects of consume focused society, globalization and popular culture phenomenons, coffe-houses transform to cafes according to western-oriented life style.
