Effect of addition inulin at different levels on the production of fat-reduced condensed yoghurt

Abstract (EN)

In this study, the condensed yoghurts, which are produced by the addition of inulin at four different levels (0 %, 1%, 2%, 3%) to the fat-reduced milks, are stored for 21 days. Dry matter ranges, acetaldehyde amounts, colour properties and slightly sensory properties of condensed yoghurts were effected by using different ratios of inülin however pH, titration acidity, protein rates, fat rates, penetrometer values and tyrosine quantities were not effected by this ratios. The chemical, physical and sensorial properties of the condensed yoghurt samples are examined at the 1., 7., 14. and 21. days of the storage. Depending on the results of analyses; the pH, titration acidity, dry matter, fat, protein, penetrometer, tyrosine, acetaldehyde and L-a-b values are determined in the range of 4.03-4.21, 1.58-1.53 %, 17.81-21.13 %, 1.62-2.27 %, 9.51-11.78 % and 137-188 1/10mm, 0.19-0.33 mg/g, 2.02-6.42, 89.26-96.80, 3.83-3.29, 8.36-9.90 respectively. It of was observed that pH and penetrometer values condensed yoghurts decreased while tyrosine quantities increased during storage. Due to the total acceptability scores, the condensed yoghurt that was produced from the milk with 3% inulin is prefered more than the condensed yoghurt swhich were produced from the milks with 1 and 2 % inulin.
