Abstract (EN)
Managing material and information flows in supply chain management is critical for the efficiency and effectiveness of processes. Therefore, businesses use value stream mapping, a lean manufacturing technique, to analyze processes holistically. The primary aim of this thesis is to develop a sustainability-focused value stream mapping approach for the food supply chain and propose improvement suggestions to reduce waste through its application. The study began with a review of literature and expert opinions. Articles focusing on value stream mapping, directly related to supply chain management, were examined and analyzed. Additionally, the topics of food supply chain and sustainability were explored in detail. Based on the theoretical insights obtained, an application was conducted in a food company. Initially, the product and product family to be observed were identified, and a current state map was prepared to fully depict the company's actual situation. Following these analyses, a future state map was created, and a value stream plan was developed and implemented. The sustainability-focused value stream mapping approach provides businesses with a competitive advantage and enables effective process management. Parameters critical for value stream mapping in food companies with continuous flow were identified, and these parameters were found to have a direct impact on both current and future state maps. The study offers short-, medium-, and long-term improvement suggestions for wastes identified in the future state mapping. Short-term suggestions were implemented as quick-to-apply solutions. Medium-term planning involved regular monitoring of processes and achieving sustainability goals. Long-term planning encompassed strategic steps requiring direct investment. This three-phase improvement plan ensures progress from part to whole. The outcomes achieved in the short term directly and indirectly influence both medium- and long-term plans. Therefore, the study was approached with a holistic perspective.
