This study is made byusing public survey with 61 olive farmers and 7 olive oil firms in 2004 productionseason, in order to represent Hatay, The study shows that there are lots of differencesbetween labour force, productivity of capital and production costs and the reason ofthis differentiations are farm size, production techniques and mistakes are made bymarketing process of production. However, lots of mistakes are made duringmedicate, irrigation, fertilization, pruning and harvesting process and effects ofperiodicity, olive farming is the most important income source for the farmers of thisarea. The average plantation area is 78 da and olive tree is 726, annual oliveproduction is 32 tons per farm in investigated farms.In the study area, it is found that duration of oil pressing start in October fotthree mounts, The amount of average pressed oil is 347 tons per firm.Keywords: Olive, Agricultural Income, Production TechniquesII
