Abstract (EN)

Creativity is the seed of innovation. Hence, creativity is a concept that organizations have to pay attention to survive. Creativity is, particularly in tourism organizations because of producing service based products, an important source of competition. Because in tourism organizations, the consumers pay for uniqueness of service and their emotional bond for that product. Uniqueness and emotional bond for unique product can only be exist with creative ideas. Recently, tourists, besides the comfort at home, they also would like to experience destination's local culture (their cuisine, life styles). Expecially, in a region that presents mass tourism based service, such as Alanya, alternative tourism types and products which provides different experience to tourists should be developed for extending tourism season. Organizations can extend seasonal demand to whole year with creative solutions. The aim of this study is to discover work environment variables that effect employee's creativity performance and which variables are prior to consider in organizations' management and product development according to food and beverage organizations' strategies for innovation and creativity in Alanya. In this study, by means of SPSS software, it is determined that work environment variables have seperated 6 factor. This factors are "organizational encouragement", "supervisory encouragement", "work group support", "freedom", "resources" and "organizational impediments".
