Macro components and micronutrient elements of Iza wheat and bread

Abstract (EN)

This research was carried out to determine the chemical composition and nutritional value of Iza wheat and bread, one of the ancient grains grown in the Bolu region. For this purpose, 3 different Iza, 1 Einkorn and 1 Flamura wheat were analyzed. In addition, the composition of the flour obtained from Iza wheat and the bread obtained from flour was investigated. Moisture, protein, crude fat, total ash, dietary fiber and dry gluten analysis were performed in the analysis samples. The amount of potassium (K), phosphorus (P), magnesium (Mg), calcium (Ca), iron (Fe), zinc (Zn), manganese (Mn) was determined from the mineral components. In addition, the amount of B group vitamins thiamine (B1), riboflavin (B2), niacin (B3), pyridoxine (B6) and folic acid (B9) were also determined. It has been determined that the husk Iza1 grown under natural conditions without using fertilizers contains 9.32% moisture, 8.94% protein (Nx5.7), 2.25% crude fat, 4.40% ash and 27.1% dietary fiber. The high amount of dietary fiber is due to the husk of the grain. It has been observed that this Iza wheat contains more protein (8.94% and 8.19%, respectively) and dietary fiber (27.1% and 23.4%, respectively) compared to the Einkorn sample obtained from Kastamonu. 4747 mg / kg of potassium and 4027 mg / phosphorus, 978 mg / kg of magnesium and 742 mg / kg of calcium, 30 mg / kg of iron, 40 mg / kg of zinc and 41 mg / kg of manganese were detected in the naturally grown Iza sample. It has been observed that Iza wheat is richer in minerals than Einkorn and common wheat (Flamura). According to the findings, the ratio of meeting the daily requirement of 100 grams of Iza bread is 80% for manganese, 24.8% for phosphorus, 21.4% for iron, 20% for zinc and 19.2% for dietary fiber.
