Abstract (EN)

This study was carried out with the aim of isolating precious chemical components present in fruit pulps (apple and tangerine) by chromatographic methods (column chromatography, TLC etc.), determining their chemical structures by spectroscopic methods and examining the antioxidant capacity. In this context, fruit pulps were obtained from Tokat DİMES, factory. The fruit pulps were dried in room conditions. Destilated water was added to the fruit pulps and boiled for 2 hours. The resulting water phases were subjected to extraction with ethyl acetate and n-butanol organic solvents, respectively. From the obtained extracts. 6 chemical components were purified by chromatografic methods. These natural compounds were identified by the spectroscopic methods (HPLC-TOF/MS, NMR) to be 5-hydroxy maltol, protocatechic acid, quercetin, gallic acid, gentisic acid and kojic acid. The antioxidant activities of apple pulp extracted with ethyl acetate and n-buthanol as well as the isolated 5-hydroxy maltol compound was determined. The antiproliferative activity of the isolated kojic acid obtained from ethyl acetate extract of apple pulp were investigated against the HeLa cell lines.
