Abstract (EN)
Nano gels are hydrophilic nanoparticles composed of cross-linked polymers. Due to their biocompatibility and high encapsulation capacity, nano gels are used in various fields. As encapsulation techniques continue to advance, the usage areas of nano gels are rapidly increasing. Encapsulation processes are widely used in the food industry for chemical preservation, pharmacology, cosmetics, personal care applications, and more. In this study, chitosan nanoparticles modified with different ratios of gallic acid were synthesized. The prepared modified chitosan complexes were converted into nanoparticles using the ionic gelation method with the use of TPP cross-linking agent, and trials were conducted with ratios ranging from 1:1 to 1:10 to determine the optimum nanoparticle formulations. The determined nanoparticle was loaded with oil, and encapsulation efficiency, size, and zeta analysis were performed. Finally, the antioxidant properties and efficacy of these products were tested on cell lines.
