Abstract (EN)

In this thesis study, which focuses on the bakeries and mills in Istanbul, the capital of the Ottoman Empire, in the first half of the 19th century, a detailed analysis was made by first classifying the bakeries and mills according to their types, spatial locations and business volumes. In addition, data on the occupational distribution, ethnic origins and hometowns of the employees working in these enterprises were evaluated, and a picture was drawn that reveals the labor force structure of the bakers and millers in the Ottoman capital of the period. In this thesis, 31 series of population books belonging to the Nüfus registers (Nfs.d.) found in the Ottoman Archives (NFS. d 96, 95, 205, 328, 269, 330, 203, 204, 267, 327, 202, 270, 200, 266, 325, 265, 268, 326, 201, 329, 419, 455, 456, 508, 542, 509, 540, 506, 541, 461, 507, 539) were taken as the main source and the data on the baker and miller trades were revealed by transcribing these books. Using this data, the network of bakeries and mills in the Ottoman capital of the period, the distribution of workers by occupational groups, their ethnic diversity and hometowns, and the structure that emerged were analyzed. The thesis presents a panoramic view of the social and economic dynamics of the period by revealing the socio-economic profiles of the bakeries and mills in 19th century Ottoman Istanbul and their employees.
