Abstract (EN)

This work deals with the quantitative determination of DNA and thickening agents (Xanthan, Sodium Alginate and ?-Carrageenan). These four target polyions are quantitatively determined by spectrophotometric titration. These compound are widely used in food and pharmaceutical industries so the quantitative analysis of them is important. Overdose usage of these compounds may cause the gastrointestinal diseases.The main aim of this study is to prove the compatibility of optical sensors for the quantitative determination of polyions. To manage this ; two different kinds of dye and three different polycations (protamine , poly-L-lysine and poly-L- Arginine) have been employed.By this method, the amount of polyions ,which are present in the real food samples, was determined and the accuracy of the method was supported by spike experiments.
