Abstract (EN)

Increasing population, changing lifestyles and consumer demands and the increase in the number of conscious consumers necessitate quality increase and improvements in products together with the efficient use of existing resources. Conscious consumers are sensitive about healthy living and turn to natural products that are both protective/therapeutic against diseases and satisfying their nutritional needs. It is known that some compounds contained in fruits and vegetables have positive effects on human health. Grape is among these fruits with its high nutritional value and richness in antioxidant-effective components, especially phenolic compounds. Therefore, in recent years, different grape extracts have emerged in areas such as food, health and cosmetics. Different methods can be used to preserve this composition in products with rich content and to minimize extraction losses, and it is also possible to ensure that the original source synthesizes these components in higher amounts before they are converted into extracts. It is known that endogenous hormones are effective in the production of these components in plants, especially by activating different signaling mechanisms. In this thesis, the use potential of methyl jasmonate (MeJA) which are methyl esters of Jasmonic Acid (JA) and Salicylic Acid (SA) in Merzifon Karası grape variety grafted on 1103 Paulsen American grapevine rootstock was evaluated. MeJA and SA was applied in the form of spray (0; 1; 2.5 and 5 mM doses) immediately after the veraison once (single application) and immediately after the veraison and 15 days after it twice (two applications). During the harvest period, the clusters were harvested and the total phenolic compounds, total flavonols, total flavanols, anthocyanins, phenolic compounds, amino acid and organic acid contents in grape berries and fatty acid amounts in grape seeds were determined. The results of the study revealed that MeJA and SA are highly effective applications in enriching the berry composition of grapes.
