Abstract (EN)

This study was conducted in 2018 considering the fact that the Trabzon persimmon (Diospyros kaki L.)genotype has grown in the villages and hamlets in Siirt province Eruh and Şirvan is rich in content and the studies on this subject were deemed insufficient. The physicochemical properties of the Trabzon persimmon were analyzed through different methods, and the amounts of antioxidants, nutrients, sugar content, flavonoid, carotenoid and phenolic compounds were determined. The Trabzon persimmon genotype examined in terms of physicochemical properties were studied on 6 replicates, and total phenolic mean of the samples in terms of gallic acid was found to be 16.20μg / μL ± 1,54 for Şirvan and 13.42μg / μL ± 0.71 for Eruh. Total carotenoid average was determined to be 3.17 μg / g for Eruh and 6.95 μg/g for Şirvan. The average results for the determination of antioxidant activity for Eruh were found to be 0.201, 0.191, 0.169 Eq/ml. At the same time, the average results determined for Şirvan were 0.192, 0.149, 0.144 Eq/ml. The total flavonoid average was calculated as 0.539 mg/ml for Eruh and 0.583 mg/ml for Şirvan. The result of the sugar analysis of Eruh genotype was202249.45 ppm of fructose, 108824.56 ppm of glucose, 11511.46 ppm of sucrose, 315.78 ppm of maltose, while the result of the Şirvan genotype was 212402.75 ppm of fructose, 145062.25 ppm of glucose, 11994.49 ppm of sucrose, 446.89 ppm of maltose. The macro and micro element averages for Eruh genotype were determined to be as Cu 1.60, Fe 25.56, Mg 475.49, Mn 4.70, P 42.94, Zn 2.34, Ca 249.10, K 14216.81 mg/kg, N %0.752, Protein %4.68, while in Şirvan genotype those values were found to be as Cu 1.16, Fe 8.58, Mg 505.77, Mn 13.77, P 46.75, Zn 1.34, Ca 125.02, K 10845.16 , N %0.605, Protein %3.78. As a result of statistical analysis, the average amount of the tartaric acid in the fruits of Trabzon persimmon obtained from Eruh region was 119.01 ppm, the malic acid was 3542.05 ppm, the ascorbic acid was 22.07 ppm, the acetic acid was 4809.50 ppm and the citric acid was 1760.55 ppm. In the samples taken from Şirvan region, on the other hand, tartaric acid was 101.71 ppm, the malic acid was 3420.84 ppm, the ascorbic acid was 24.47 ppm, the acetic acid was 3357.56 ppm and the citric acid was 1310.68 ppm.
