Investigation of phenolic compounds, antioxidant capacities and bioaccessibility of Spirulina

Abstract (EN)

Spirulina platensis draws attention with its healthy aspects like antioxidant, antidiabetic, antibacterial, antiviral, anticancer. In this study, Egert, Shiffa Home and Hana branded Spirulina platensis powder products which commercially sold in Turkey were compared and the changes in total phenol content, antioxidant capacity of extractable, hydrolyzable abd bioaccessible phenolics of these products were investigated. In this study, Hana branded Spirulina powder (7200,38±1,01a mg/100 g GAE dm) showed the highest total phenol content value of Spirulina platensis powder products. In this study, when it compared with other samples, hydrolysable Hana branded Spirulina platensis powder showed highest TEACABTS value (132,03±2,60a μmole TE/g), hydrolysable Shiffa Home branded Spirulina powder showed highest TEACDPPH value (129,01±0.04a μmole TE/g) and hydrolysable Hana branded Spirulina powder showed highest TEACCUPRAC value (206,15±2,11a μmole TE/g). Antioxidant capacity and total phenol content of hydrolyzable phenolics of Spirulina platensis powder products were higher than antioxidant capacity and total phenol content of extractable phenolics of Spirulina platensis powder products. In the all of samples, bioaccessibilities of total phenol contents was range of 77,0-87,18 %. Bioaccessibility of TEACABTS was in the range of 55,90-92,87 %, bioaccessibility of TEACCUPRAC was in the range of 20,57-34,31 %, bioaccessibility of TEACDPPH is in the range of 3,59-16,31 %. Shiffa Home branded product (87,18±4,33 %) showed the highest bioaccessibility (%) of total phenol content value. Otherwise, Hana branded product (92,87±0,05 %) showed the highest bioaccessibility (%) of TEACABTS value. Egert branded product showed the highest bioaccessibility (%) of TEACCUPRAC (34,31±0,84 %) and TEACDPPH values (16,31±1,42 %).
