Abstract (EN)

In this thesis, an alternative drying option has been developed for drying with rural exhibitions. Attracting negative drying conditions to desired intervals during drying increases the quality of dried grapes. The parameters measured during drying are stored in the system. These parameters are used as input to the calculation processes to determine the quality of the drying and to obtain information about the drying process. In this thesis, grape fruit was chosen as the drying product. The grape fruit was dried in 3 different ways, without pretreatment, pretreatment and pretreatment, and the pretreatment liquid was applied again every 4 hours. The differences between these drying processes were evaluated. In the study, it was observed that the pre-treatment and the pre-treatment fluid was dried at the fastest rate, the pre-treatment sample was dried at medium speed and the non-pre-treatment sample was dried at the slowest rate.
