Determination of postharvest coating applications on physiological deterioration and storage life of persimmon fruits

'MKÜ Harbiye' persimmon fruits were coated with chitosan, sodium alginate, chitosan + sodium alginate. After coating applications fruit samples were stored in MAP for 100 days at 0 °C and 90 ± 5% relative humidity cold storage. Effects of 'MKÜ Harbiye' persimmon fruit different coating applicatins on weight loss, fruit flesh firmness, fruit peel color (L*, a*, b*, Hue, Chroma), SÇKM, pH, TA, total phenolic content, DPPH, ethylene production, O2 / CO2 ratio, electrical conductivity, chilling injury, microbial and sensory quality were evaluated during cold storage.'MKÜ Harbiye' persimmon fruit coated with chitosan, sodium alginate and chitosan + alginate were more effective on weight loss, fruit flesh firmness, O2/CO2 ratio, ethylene production rate, electrical conductivity, microbial quality, chilling injury, microbial growth rate compared control during storage. It was concluded that coating applications of 'MKÜ Harbiye' persimmon fruit had an important effect on the fruit preservation quality after harvest. While chitosan coating application of 'MKÜ Harbiye' persimmon fruit limited persimmon fruit, ethylene production rate, microbial growth, chilling injury. However chitosan+sodium alginate coating application limited decrease of flesh firmness, increase of weight loss, CO2 and electrical conductivity and loss of antioxidants activity compared to others.
