Abstract (EN)
The Anatolian Seljuk period, started with establishing a state of Turks under the leadership of Kutalmışoğlu Süleyman Şah, it is seen as an significant age in which the cultural values brought from Turkistan by the masses are enriched by mixing with Islamic doctrines and the values of peoples already existed in Anatolia. Food supply, production and nutritional habit which have gained due to geographical conditions and their social life styles it became more technical with more varied and resident life conditions because of new materials and processing techniques different geographical conditions in Anatolia. The aim of this study is to investigate the cultural history of the Anatolian Seljuk period which is a milestone in Anatolia and constitute an important stage of cultural treasure, in terms of food and food production techniques in the context of main sources of the period concerned and to present the data revealed in this way through Methodology of History Science from the perspective Food Engineering.
