Abstract (EN)

In the world, studies on ovens that have high energy efficiency and ease of use are increasing day by day to make more efficient use of energy. Nowadays, control methods are developed in electric ovens and the data used for control are increased. In this study; various articles and patents have been examined in order to determine the factors affecting the characteristics such as energy consumption, cooking time, cooking programs and cooking quality in electric furnaces. As a result of the investigations, baking temperatures, cooking programs and cooking time were obtained in the ovens. This subject has been designed with a PLC controlled, touch screen electric oven, which can be controlled with an engineering point of view and taking into account the weight of the object to be cooked. The user can adjust the temperature control, cooking time and cooking program via the touch screen. The user can monitor the cooking process graphically via the touch screen and record the data in the same graph. In this study, the change in the weight of bread dough in the process of baking was investigated. The different weight in grams of the same bread dough were cooked at similar temperatures and the differences between cooking times were compared. According to the data obtained from these studies, smart oven was designed and cooking programs were created.
