Abstract (EN)

The volatile compounds of the Ananas melon (Cucumis melo var.) variety obtained from different locations were investigated.The volatile compounds in Ananas melon obtained from local markets established in Hatay (Kırıkhan), Adana (2) and Osmani-ye (Kadirli) were analyzed by Gas Chromatography-Mass Spectrometry GC-MS headspace method.The melon fruit flesh samples analyzed contained esters, alcohols, aldehydes, ketones and terpenes.Thirty groups were identified from esters, eighteen from alcohols, eight from aldehydes, three from ketones, and four from terpenes.Twenty-sixaroma components were detected in the first sample (Hatay/ Kı-rıkhan), twenty-nine volatile components in the second sample (Osmaniye/ Kadirli), thirty-three volatile components in the third sample (Adana 1) and twenty-four volatile components in the fourth sample (Adana 2).According to the analysis, differences in volatile components were found in melons grown in different locations.
