Abstract (EN)

The study had been carried out in order to research the relationships in between nutrient element concentrations and some quality factors of winter bread wheat plants that are being grown in Antalya city. With this purpose, 30 samples from each of soil, flag leaf, straw and grain had been collected as to represent each locale determined at Aksu, Döşemealtı and Korkuteli by 10 samples. In the soil samples, analyses of pH, CaCO3, electrical conductivity (EC), texture, organic matter, nitrogen (N), phosphorous (P), potassium (K), calcium (Ca), magnesium (Mg), iron (Fe), zinc (Zn), manganese (Mn) and cupper (Cu) had been performed, and in leaf, straw and grain samples, analyses of N, P, K, Ca, Mg, Fe, Zn, Mn and Cu had been performed. In the grain samples, analyses of weight of a thousand grain, dry matter, protein amount, gluten amount, gluten index, falling number and sedimentation had also been performed in or to find out the quality factors. In soil samples, textures had been classified substantially loam, clay loam and clay; pH and CaCO3 had been classified as high; EC was low; organic matter, total N and exchangeable K is inadequate; SO4-S was middle, available P had been classified as high; exchangeable Ca is inadequate; exchangeable Mg is sufficient; available Fe and Zn are inadequate; available Mn ve Cu had been determined at sufficient levels. In flag leaves, frequently total N, S, P had been determined sufficient; K, Ca, Mg levels had been found low; Fe and Zn sufficient; Cu had been determined as low level. Meanwhile total N and P were detected inadequate; S was high; K, Mn, Cu were sufficient; Ca and Fe were high and Zn was determined as deficient. Half of total samples' Mg concentration was sufficient and other half of the samples had low Mg concentration; while N/S rate should be 15-17 at optimum conditions, all samples was determined under 15. Weight of a thousand grain values generally had been measured between optimum values, which should be among 30-48 g. All the grain samples, dry matter percentage amount are sufficient; sedimentation rates (ml) are mostly classified as good, protein amount is low, gluten content (g) is low and medium, % gluten index is classified as very strong, also falling number (sec) had been classified as very low. There was a positive and strong correlation of grain N concentration, between grain protein content, gluten and sedimentation rate; also there was a negative and important correlation on grain N and K concentration between grain gluten index. Nevertheless a positive and important correlation was observed between grain Fe concentration and falling number, on the other hand this important and positive correlation had been observed, between grain Cu and dry matter. While an important and positive correlation had been observed of grain gluten content and sedimentation rate between protein content, otherwise, there is an important and negative correlation of gluten and protein content between gluten index, and also the same important, negative correlation had been observed between sedimentation and gluten content.
