Abstract (EN)

The soft outer shell (pericarp) obtained during the processing of pistachios (Pistacia vera L.) is given to sewage as waste without any application and evaluation and causes serious environmental problems. In order to determine whether the released wastes have an evaluable potential; protein, fat, ash, cellulose, calories, plant nutrients and antioxidant activity by measuring TAS (Total antioxidant) and TOS (Total oxidant) values were determined in soft outer shells of pistachios (Red, boz, Siirt varieties). In water extracts, While TAS values were detected 4,3408239, 4,38576779 and 4,2883895 mmol / L in Siirt, boz and Red pistachio, respectively; TOS values were found 7,01388 in Siirt pistachio, 7,549826 in Boz, and 7,376301 µmol / L in red pistachio. In methanol extracts, While TAS values were detected 4,35955056, 4,310861423 and 4,29962546 mmol/L in Siirt, boz and Red pistachio, respectively; TOS values were found 7,950917 in Siirt pistachio, 8,53891919 in Boz, and 8,889439 µmol / L in red pistachio. As a result of this study, it was found that soft shell of pistachio has evaluable potential in fertilizer, feed and fuel industries. As a result of TAS and TOS, it was found that pistachio soft outer shells have antioxidant properties.
