Abstract (EN)
In this paper, the production methods of wine and olive oil, which were among the trade products during Antiquity, was examined. Olive oil production methods continuously improved due to endless demand and limited supply. This study covers the changes in the production stages with the developing technology to keep up with the demand. The production similarities between wine from grape fruit and olive oil; the consumption of wine with its increasing volume in production and trade, its production technology remaining almost unchanged, is also examined. Additionally the demand for wine and olive oil, the most traded two product with grain in tradeships, with the seaways being used in transportation, is covered in the paper. It is also detected that most of the wine production and storage methods mentioned in ancient sources are still valid today. Keywords: wine, olive, olive oil, grape, trade
