BIOCHEMICAL ANALYSIS OF SOME HONEYS VARIETIES IN THE REGION ARDAHAN AND MEASUREMENT OF NUTRITIONAL VOLUES IN THE Saccarharomyces cerevisiae CULTURE MEDIA In this study, the biochemical analyses of the some honey samples from different origins that have been harvested from Ardahan region of Turkey were performed. It has been used seven honey samples in the study, from collecting the Yol Ağzı, Demir Döven, Türk Gözü, Dal Gözü, Kale Önü and Kol villages and Posof town. The levels of flavonoid, hydroxymethyl furfural (HMF), sugar, and total phenolic and antioxidants activities of honey samples have been measured, additionally examined their effects on the yeast growth in vitro media. According to HPLC analysis results, the contents of flavonoid, sugar, and total phenolic in 5th and 7th honey samples showed similar to properties of naturally honey samples. In addition, it has been found that the content of HMF in these honey samples lower than other honey samples. In our results, all the honey samples have scavenging effects on the DPPH radical. After the biochemical analysis on the honey samples, it was added to honey samples replace to glucose in growth media of Saccarharomyces cerevisiae, the level of fatty acid ADEK vitamins and phytosterol, total protein, GSH and MDA were examined. In the result of experiment in culture media of S. cerevisiae, the levels of total protein, GSH and ADEK and phytosterol were higher than the control group. According to our results, honey samples often consume in our everyday life which it was determined that different effects have on the biochemical parameters in vitro media of S. cerevisiae. In addition, except two honey samples, the level of maltose in the other honey samples was found high. It can be evaluated that high maltose level in honey samples to be as a result of having it's produced in an unnatural ways. Maltose is formation to hydrolyzing starch, because of no found plant juice. Keywords: Ardahan honey, Antioxidant activity, HMF, Saccharomyces cerevisiae, Total protein, reduced glutathione
