A study of the effects of ultraviolet rays on the fungus flora of dried figs grown in the surrounding area of Aydın

oz Bu çalışmada Aydın Ticaret Borsa'sı Özel Gıda Laboratuvar'ı ve Aydın, Nazilli ve İncirliova pazarlarından alınmış olan 50 kuru incir örneğinin küf florası incelenmiş ve aflatoksijenik olanlar belirlenmiştir. İzole edilen 127 izolatın Aspergillus, Trichoderma, Fıısarium ve Acremonium olmak üzere 4 küf genusuna ait olduğu saptanmıştır. 127 izolatın 74'ü Aspergillus, 24'ü Trichoderma, 16'sı Fusarium ve W ü Acremonium genusuna aittir. İzole edilen 74 Aspergillus genusunun 16'sının A.flavus ve l'inin A.parasiticus olduğu bulunmuştur. 17 aflatoksijenik izolatın 4 tanesinin aflatoksin ürettiği belirlenmiştir. Bu 4 izolatın 3'ü A.flavus, l'i A. parasiticus' Var. Ayrıca UV ışınlarının kuru incirlerde üreyen küf sayısını azalttığı ve aflatoksin miktarını yaklaşık %25 oranında düşürdüğü gözlenmiştir. ABSTRACT In this study, the mold flora of 50 dried fig samples that were taken from Food Control Laboratory of Commodity Exchange of the Aydın Province and Aydın, Nazilli and incirliova bazaars were examined and the aflatoxigenic ones were determined. It was determined that the 127 isolates which were isolated, were belongs to the genus Aspergillus, Trichoderma, Fusarium and Acremonium. Isolated molds are, 74 Aspergillus, 24 Trichoderma, 16 Fusarium and 13 Acremonium out of 127. It was found that the 17 aflatoxigenic isolates included 4 aflatoxigenic strains that were capable to produce aflatoxin. These are 3 A.flavus and 1 A.parasiticus out of 4. In addition, UV irradiation was found to reduce the mold count reproduced in dried figs and decreased the aflatoxin quantity in an amount of 25%.
