Abstract (EN)

In this study, plum (red), mulberry, grape (red), apricot and fig that are the states of fresh and dried, analyzed antioxidant content and comparied for their the antioxidant capacities. We investigated the fruit extracts for 2,2-diphenyl-1-picryl-hidrazine (DPPH) and hydroxyl free radical scavenging activity, cupric ions (Cu2+) reducing capacity, total phenolic content and the total reducing power by the method of reduction of potassium ferricyanide. We determined that plum has the highest antioxidant capacity among these five fruits. The lowest antioxidant capacity was determined fort he figs. In addition, we observed higher antioxidant activity that was shown per mg of dried fruit, when the fruits dried.
