Abstract (EN)
In this study, strains of Lactobacillus acidophilus ATCC 4356 and Lactobacillus plantarum DSM 20246 were used. The effect of sodium benzoate on the cell growths, antimicrobial activity, aggregation, total amount of cellular protein and EPS production by the cultures were investigated. By using the different concentrations (0,05-90 mg/ml) sodium benzoate the minimal inhibition concentration (MIC) levels of the cultures were determined. The (MIC) levels of Lactobacillus acidophilus ATCC 4356 and Lactobacillus plantarum DSM 20246 cultures were 30 mg/ml and 90 mg/ml of sodium benzoate respectively. In general both cultures have showed agreat resistances to sodium benzoate. Also, both cultures produced high amount of acid.Laktobacillus strains have showed high antimicrobial activities on tested bacteria E. coli ATCC 35218, E. coli O157: H7, S. aureus ATCC 25923, S. enteritidis ATCC 13076, Bacillus cereus RSKK 803, Micrococcus luteus NRLL B- 4375 and Pseudomonas aeruginosa ATCC 27853. L. monocytogenes ATCC 7644 strain was not inhibited by Lactobacillus strains.The highest (69.6 mg / L) EPS production by Lactobacillus acidophilus ATCC 4356 strain were determined in the medium containing (2.5 mg / ml) of sodium benzoate. The hight amount (58.7 mg / L) EPS production by the culture Lactobacillus plantarum DSM 20246 were obtained in the medium containing (2.5 mg / ml) of sodium benzoate. The EPS production by the cultures in controlled medium were 54.7 and 51.9 (mg/L) respectiviely. In the study, it is found that EPS production and cellular protein amounts of the bacteria decreased by the increasing concentration of sodium benzoate. Both strains have showed high autoaggregation (28-55%) and coaggregation (3.2-58.3 %) activities.
