Exopolysaccharide (EPS) production of some lactic acid bacteria with investigation antibiotic resistance

In this study, some strains of Lactobacillus, Lactococcus, Streptococcus, Enterococcus, and Leuconostoc genus were used in this study. Cultures of Lactobacillus acidophilus ATCC 4356, L. helveticus ATCC 15807, L. bulgaricus ATCC 11842, L. bulgaricus G11, L. plantarum DSM 20246, L. plantarum (RSKK No: 02030), L. fermentum ATCC 23271, L. ruminis ATCC 25644 and L. gasseri ATCC 19992; Streptococcus salivarius subsp. thermophilus ATCC 1442 and S. thermophilus (RSKK No. 667/01017), Lactococcus subsp. Cremoris; Enterococcus faecium DSM 20442, E. faecium RT 55, E. faecium RT 82, E. fecalis NCDO 581, E. fecalis RT 8 and E. fecalis RT 121, Pediococcus acidilactici pedL and P. pentosaceus CHR HANSEN, Leuconostoc mesenteroides subsp. cremoris (RSKK No.: 06043-DSM 20346) and L. mesenteroides (RSKK No: 1061) types have been used.The cell growths, amount of lactic acid and final pH values of the cultures were estimated. EPS production by the strains were found between 46,42 - 208,88 mg/l. The highest (208,88 mg/l) EPS production were detected in the culture of Enterococcus fecalis RT8 and the lowest amount (46,42 mg/l) of EPS were estimated in the Enterococcus fecalis NCDO 581 culture . The cell growths of the strains were not affected of EPS production by the cultures. The autoaggregation values of the strains were determined between % 5-35 and the coaggregation of the strains with E.coli has been found between % 4-31.All strains used in this study, have been found to have high sensitivity from %9 to %95 to all antibiotics except nalidixic acid, polymyxin B and kanamycin.Key Words : Lactic acid bacteria, Probiotic, Acid production, Antibiotic resistance, EPS production, Aggregation,
