The analysis of service system by waiting line model: An application in fast food restourant

Abstract (EN)

Fast food businesses is different from restaurants with features to provide quick service. Therefore, customers expectations from this type of businesses is to be provided service requests as soon as possible. Waiting line models, utilizes mathematical models and performance measures to assess and hopefully improve the flow of customers through a queuing system. With waiting line model, it is possible to reduce optimum level, the waiting problems in service systemThe aim of study, is to identify the waiting problem by anlayz of fast food sercice sistem with waiting line model and deriving some scenerio towards to mentioned problems. For the purpose, the case study, one of the qualitative, has been applied. Interwiev and documents analysis techniques, which ones of the qualitative research techniques, have been used. In the aim of determining of the data distribution, Kolmogorov- Smirnov one- sample test has been applied in SPSS package programme. System analyzed by WINQSP package programme. As a result of this analysis, in first stage of service system, service provider idle problems and in second stage, costumer waitnig problems have been determined. To solve the mentioned problems some scenarios have been derived and analyzed. According to result? appropriate scenario has been offered to business.Key Words: Waiting, Waiting Line Model, Simülation, Fast-Food
